The Butler’s Pantry French Toast with Raspberry and Vanilla

Planning a family breakfast this weekend?

Look no further than this family favourite – The Butler’s Pantry French Toast with Raspberry and Vanilla.

Ingredients:

French Toast:

  • Brioche or milk pan               1
  • Free range eggs                      4
  • Milk                                          250ml
  • Heavy cream                           250ml
  • Nutmeg                                    Pinch
  • Cinnamon                                Pinch
  • Sugar                                        200g
  • Bourbon                                   3oz

Raspberry-Vanilla Compote:

  • Raspberries                            200g
  • Sugar                                        100g
  • Water                                       100ml
  • Vanilla pod                              1

Method:

For the French toast mix all the ingredients together, slice the bread and dip into the mixture, pan fry in a non-stick pan using a little butter. Cook on both sides for a couple of minutes until golden brown.

To make the compote place all ingredients into a sauce pan and bring to a boil, reduce heat and cook for a couple of minutes and taste for sweetness – add a little more sugar if necessary.

Dust with a little icing sugar before serving as is or with a dollop of natural yoghurt.
